What does Specialty Coffee mean?

The SCAA defines specialty coffee in its green stage as coffee that is free of primary defects, has no quakers, is properly sized and dried. Also presents in the cup free of faults and taints and has distinctive attributes. The coffee must be able to pass aspect grading and cupping tests.

Specialty Coffee is any coffee that receives above 80 points up to 100 points in the cupping test.

.How does Santa Helena Organic Coffee grows?

Santa Helena’s coffee grows on the Southern Mountains of the State of Minas Gerais in Brazil, at an altitude of 1200 meters, and that’s why the coffee has a special flavour.

It grows naturally within the shade of lush forests , providing a home for wild animals and plants, consequently, sustaining soil fertility and an alive ecosystem.

The planting and harvest are made manually and does not go through any chemical or mechanical process.
The coffee dries on the sun on the large farm terrace, exactly as in the 19th century, when the first coffee plantation started in the family. After that the coffee goes to the cooperative where they remove the barks and bagged in jute bags.

It is Organic certified by AAO (Association of Organic Agriculture), International Organic Certification USDA, Fairtrade and BIO INSPECTA in Switzerland.

Our coffee comes from Brazil in Raw Arabica Green beans and goes directly to the Engadin Swiss Mountains.
There it is roasting in a Wood Roaster, respecting ancient traditions.

It does not go through any chemical, mechanical or blending process.
